Wizard of NOS Nitrous Systems work by reducing the temperature in the engine vastly by as much as 60 degrees. Both fuel and air reduce in size when cooled thus allowing a huge amount more fuel and air to be packed into the cylinders. When the mixture is burned the Nitrous Oxide gas then releases further oxygen which increases burn rate and temperature. Wizards of NOS nitrous kits for most applications mix extra fuel to ensure that the engine does not run lean with all the new found oxygen.  
To control the power increase Wizards of NOS kits use interchangeable jets which adjust the amount of fuel and Nitrous Oxide NO2.
